Hello. My name is John Troy. Some of my friends call me Wizard, so I use it as a trade name, too. I am the formulator of Macalat. I am a native of and still live in North Carolina with my wife of 35 years, Carol. We live in Northern Orange County, North of Hillsborough and Chapel Hill in a rural area. I am now 75.
I retired from the organic food trade seven years ago and have been living happily ever after. Recently, I had a brainstorm out of the blue, while on my daily walk. It was about an exotic Shamanic chocolate for those of us that want the very best super food goodies in our diet. I wanted it to taste good, too. I no longer eat sugar, cheap vegetable fats, or gluten. Instead, I want pure, organic, nutrient dense, good fat and low carb ingredients that have the benefits I feel really good about. Macalat is a thought of the thoughtless. I couldn't shake this inspiration out of my head and eventually started playing with it. One thing leads to another. Why do such healthy ingredients like Cacao have so much sugar and taste so astringent? Surely, there is a better way. This idea stayed put, wanted to happen and coaxed me out of retirement. I accepted the challenge.
A little bit about my journey in food... I love all aspects of food, from growing to dining to sacraments and Prasad. Food and sharing food have been at the center of fellowship all my life. I actually began my first real food company 35 years ago as a cottage industry. It was one of the first power bars, called, Wizard Baldour's Power Pac. That was the beginning of a wonderful career in natural and organic food. I am a pioneer of many natural and organic flavor profiles in the marketplace today and was the originator of Honey Mustard dressing that is now global in scope. I developed, sourced and produced the many organic dressings, sauces and condiments under the Whole Foods 365 Organic label that are in distribution nationwide at all Whole Foods Markets. I consulted with and produced many brands including The Wizard, Premier Japan, Whole Foods 365, Annie’s, Central Market, Spectrum, Litehouse, Simply Delicious, Earth Fare, Charlie Trotter, OrganicVille and Kraft Foods. I also developed and produced sugar free products for Dr. Atkins. When I retired, I was CEO of one of the largest certified organic bottlers of sauces, dressing and condiments in the world. I have been fortunate and blessed.
This brainstorm was the end of my “end of life” Sabbatical. That thought of the thoughtless bloomed and I found myself doing what comes naturally and allowing the brainstorming, conjuring and tweaking to fill my time. I find myself panning for gold, so to speak, in all aspects of Macalat's emergence. Noticing and collecting many ingredients and ideas, mixing them together in different versions, carefully tasting and then omitting the ones that didn't fit and sync, perfectly in tune. Seems the secret of panning for gold, is the intuition of what to let wash out, leaving the nugget.
A real chocolate lab laid claim to my Wizard’s Den, with a stone grinder, tempering machine, chocolate tools and accessories. Carol is totally in to it, as well. She is my silent partner. We love to work together, especially with food. The new equipment and tools honed skills in Chocolatiering, comprehension, tweaking and innovation. We wanted a delicious delivery system for Shamanic super foods and spices. Nuances in the alchemy of chocolate with grinding and tempering opens a whole new culinary world with an insight into fine-tuning the subtle flavors and how they marry. It is a mesmerizing art. After a half year of intensive research, conjuring, tinkering, tasting, tweaking different ingredients, listening to critical feedback and drawing on years of experience in organic flavor development, I put together a recipe and process to offer the benefits of Cacao and other super foods that we love into a Shamanic Chocolate.
There is an inherent simplicity and grace in the making of Macalat. It starts with the finest recipe of couverture chocolate that embraces other Shamanic ingredients and spices. Organic Cacao, gelatinized Maca, Matcha Green Tea, Madagascar Bourbon Vanilla and Andes Gold Peruvian coffee, along with the Shamanic spices are stone ground producing an exotic dark elixir. It takes many hours with stone wheels rolling over solid granite, generating the warmth needed to keep the Cacao butter fluid while the ingredients are counching, refining and equilibrating. The exotic Macalat flavor manifests in this phase. When the grinding in finished, the warm elixir is critically tempered, cooled and poured into their forms to set up.
The warm elixir sets fully in three to four hours, releasing itself out of its form. Eight little squares make up a single bar. Macalat is hand wrapped in a thin colorful metal foil to prevent the Cacao Butter from being absorbed into the outer wrapper. This outer wrapper provides additional cushioning to protect the delicate premium couverture chocolate. Just a bite of Macalat offers a calm alertness and deep sense of well-being with an unexpected exotic sweet finish. It does so without the need for added sugar or anything else the least bit questionable. I wanted Macalat to be a perfect fit for Paleo, diabetic and insulin resistant dieters, those on sugar-free and low carb diets, Vegans, and those who are gluten intolerant. The kids love it, too, without ever missing the sugar.
Shamanic infers that this chocolate elixir is made with the art of sensing, preparing, using and combining certain ingredients with beneficial spices that are loaded with phytonutrients. Shamanic also means not using anything the least bit artificial or phony. That includes not using sugar in any of its hidden and pseudo forms. It also refers to the time honored artisan way of using stone grinding and the warmth of fire as the alchemist’s tools that transform and fuse ingredients for the best taste as well as bioavailability of nutrients.
