So what is Kombucha exactly?

"Kombucha is a fizzy and fermented probiotic tea. This tea began in Asian cultures thousands of years ago, and has since spread all around the globe due to its amazing health benefits.

[At Lenny Boy] We start with organic and fair trade green tea, organic cane sugar, and the Kombucha culture or "mother", also known as a SCOBY. A SCOBY is a symbiotic culture of bacteria and yeast. We let the mixture ferment for about two weeks, then add organic goodness in the form of fresh-juiced organic produce and/or teas. It has a tart bite similar to champagne or cider, due to its fermentation.

We use an aerobic open-top fermentation method, which allows the beneficial bacteria to flourish and produce b-vitamins, antioxidants, and plenty of probiotics. This method of fermentation keeps the brew below .5% alcohol, similar to unpasteurized apple cider vinegar or a ripe banana. Kombucha contains only trace amounts of caffeine, as most of it is fermented out during the brewing process. This brew is great for digestion, immune system, and overall immune health."

Who is Lenny Boy and what makes Lenny Boy so great?

"Lenny Boy was founded by Townes Mozer in 2012, and named after his beloved rescue pit bull mix, Lennox. There are a couple of things that set our brews apart.

First, we use only certified organic ingredients in our teas. We use as many local ingredients as possible to help support local farmers and sustainable agriculture.

Our motto is "leave it better than you found it!" Some of our main staples are North Carolina beets, blueberries, and strawberries, and South Carolina peaches. We juice all of our produce and throw it right into the brew, for added health benefits.

Another thing that sets us apart is our use of fair trade organic green tea instead of black. Green tea has a higher antioxidant content than black tea, less caffeine, and a milder flavor. We think green tea helps our flavors shine through, and makes a less tart and more drinkable brew.
