Happy National Blueberry Month! July is dedicated to the appreciation and celebration of blueberries. In light of this festivity, the Green Sage will be offering a number of blueberry dishes including Blueberry Pancakes and a Blueberry Kale Salad (see below for ingredients).

Indigenous to North America, Native Americans have been enjoying and benefiting from blueberries for hundreds of years. Referring to blueberries as “star berries” because the blossom end of each berry that resembles a five-pointed star, Native American folklore mentions that the Great Spirit sent “star berries” to ease children’s hunger during a famine. It was said that Native Americans gave blueberries to the pilgrims to help them get through their first winter. 

Ranking as one of the most antioxidant rich foods, blueberries help to optimize health by combating free radicals that can damage cellular structures and cause diseases. A recent study on blueberry antioxidants and the effects on the brain and nervous system showed that blueberry consumption can improve memory. The study, which focused on adults with an average age of 76, showed that 12 weeks of daily blueberry consumption improved scores on two different cognitive function tests including memory. Blueberries derive their blue color from their high content of anthocyanin, a compound that is responsible for neuron protection. It is appears that the presence of this component may be the main source of blueberry's antioxidant and anti-inflammatory properties. 

In addition to blueberries high capacity of antioxidants, they also possess a large amount of fiber (1 cup representing 14% of daily value) which helps keep cholesterol low and aids in regularity of the digestive system. They also contain a large amount of Vitamin C (1 cup representing 24% of daily value) which contributes to a healthy immune system, formation of collagen which prevents wrinkling, and healthy capillaries.
